It has taken us a little longer to post what’s been cooking in our kitchen BUT here we Goooo….
Zoodles-zucchini noodles; a great and healthy, low carbohydrates, gluten FREE alternative to pasta. Very simple to prepare and Super Delicious
Ingredients:
- 450g Nocturnal Valley Fresh Zoodles (Plain or Stir Fry)
- 30g Nocturnal Valley Fresh Basil (Thai, Italian or Bush)
- 1 medium onion
- 4 large ripe tomatoes
- 1 clove garlic
- 2 tablespoon cooking oil (Preferred choice . This recipe uses Olive Oil)
- Dash of salt
Preparation:
- Prepare the onion and garlic, wash and set aside
- Chop the onion and garlic and set aside
- Wash the tomatoes and basil
- Peel off the tomato skin and chop into small size,
- Chop 15g of the Nocturnal Valley Fresh Basil
- Pour 1 tablespoon of oil into pan and saute onion and garlic for about 3 minutes
- Add the tomatoes, basil and dash of salt to the sauted onion and garlic
- Cook the sauce on low to medium heat for about 10 minutes
- Whilst the sauce is going pour 1 tablespoon oil into another saute pan over medium heat
- Empty the 450g Nocturnal Valley Fresh Zoodle pack into the onion and saute over medium heat for 3-5 minutes. Do not over cook they will become soggy and soft
- Put a dash of salt to the cooked Nocturnal Valley Fresh Zoodles and serve with the sauce
- Dinner is ready in 20 minutes

- Serve with your choice of meat-chicken or fish go best as this is a light dish
- Add garlic bread for the carb lovers
- Can be paired with a choice of white or red wine
