Ingredients
- 125g GSK Fresh Produce cherry tomatoes
- 200g fresh cucumber
- Salt to taste
- Black pepper to taste
- 50ml Vinegar
- Avocado (optional)
- 30g GSK Fresh Produce Parsley (optional)
Preparation:
- Slice your GSK Fresh Produce cherry tomatoes into quarters and set aside in a clean bow.
- Unevenly peel the cucumber leaving some green for roughage.
- Chopped the peeled cucumber into one inch cubes and add to the tomatoes.
- Peel and deseed the avocado.
- Slice into one inch cubes and set aside. Rinse a couple of leaves of GSK Fresh Produce pre-washed parsley and dry. chopped into small pieces.
- Mix GSK Fresh Produce cherry tomatoes, cucumber, salt and pepper to taste and the vinegar together.
- Sprinkle chopped GSK Fresh Produce parsley for flavor and garnish.
Enjoy a light healthy low sodium nutrient packed salad with avocado on the side as a side dish or compliment to your meal.
